Italian chicken breast recipes are super easy to make in your crockpot. It is this week’s featured “cook at home day” recipe. Enjoy!
Ingredients:
6 chicken breasts, boneless, skinless, cut in cubes
3 T olive oil
1 package dry Italian dressing mix
1 can cream of celery soup
1 8 oz package cream cheese cut into cubes
1/4 cup chicken broth (home made or canned)
1 large onion chopped
1/2 pound fresh mushrooms sliced
1/4 teaspoon garlic minced
Directions:
Place the olive oil in a bowl. Add the cubed chicken and be sure to cover each piece of chicken completely with the oil. Place the Italian dressing mix in a ziplock bag. Add the chicken and shake to coat well.
Place the chicken in the crock pot. Cover and cook on low for approximately 3-1/2 hours.
After 3 1/2 hours (while continuing to cook the chicken in the crockpot) spray a skillet with non-stick cooking spray. Over medium high heat saute the onion and mushrooms. Then add the cream cheese.
Stir in the soup and the chicken broth. For extra flavor add about 1/4 cup of the juice from the crock pot. Add the garlic and stir until the entire mixture becomes smooth. Salt and pepper to taste. Pour the mixture over the chicken in the crockpot. Continue to cook for one more hour.

These “dump it all in” recipes are my favorites. I know you make the sauce in a different pan, but still.
The quicker, the better. The great taste to me is almost an afterthought!
