Turkey tacos are the best (we also make tacos de papa, aka mash potato tacos),
turkey tostadas,
then there's turkey and mash potato flautas, turkey mole,
turkey fried rice (good for dark meat),
turkey and dumplings,
turkey enchiladas,
turkey in the baked mac and cheese....
and by this time we've run out of turkey long ago and maybe roasted another one.

Of all of these things, turkey tacos remain the family favorite and we have them the day after thanksgiving.

If you can only think of 5 things to do with turkey, you're not thinking at all.

Personally, I just like frying my leftover turkey with a bit of olive oil, basil, Italian seasoning, onion powder, garlic powder, salt, and whatever grill seasoning I have in the pantry (Mrs. Dash, Cajun seasoning, etc.). It makes a pretty good meal, in my opinion.

Wow. I spent a career in the restaurant industry and I could never find anything decent to do with leftover turkey besides sandwiches.

I might not get to all these recipes this year, but I'll be sure to try them all out.

Can't wait!

My favorite turkey leftover is Jook Soup. My mom makes it every year, and I think I enjoy it more than the Thanksgiving feast itself. Also, it's insanely budget friendly. It'll stretch out your leftover turkey+bones like crazy.

Not my mom's recipe, but here's one:
