Five Breakfast Ideas You Can Use at Dinner

Breakfast food is always a favorite in my house, but we don’t always have time to prepare an elaborate breakfast before work or school each morning. Instead, we end up making do with fruit or a bowl of cereal. We still get plenty of nourishment, but these quick meals aren’t as satisfying as a full breakfast.

So, how do I find a way for us to enjoy a more complete breakfast? It’s simple; we have breakfast for dinner. In the evenings, I have much more time to prepare the types of breakfasts that make my family happy, and I get to sit down and enjoy it with them. Here are a few of our favorite breakfast/dinners:

Waffles – When I have time to focus on my waffle-making, we have decadent, elaborate waffle dinners. I top them with whipped cream and berries; no boring maple-flavored syrup for us. Banana slices taste great, too.

BLT’s – When we’re in the mood for a heartier breakfast/dinner, I make BLT sandwiches. Bacon fries up in almost no time in the microwave. The kids are in charge of making the toast, while I slice up the tomatoes. I enjoy the process of working together to make dinner almost as much as I enjoy eating our dinner when we’re done.

Breakfast Burritos – Having burritos sounds like a normal dinner, right? We just choose to fill ours with egg and sausage. When we’re in the mood for spicy food, we add a little hot sauce to the mixture. Cubed pieces of ham are a nice alternative to sausage. Don’t hesitate to select fillings that your family will enjoy.

Omelets – If you’re looking for the breakfast/dinner idea that includes vegetables, this is the one. Warm omelets are a simple dinner choice that I can alter according to what I have on hand. Feta cheese, ham, and peppers are popular fillings for our omelets. Experiment with different vegetables to find your family’s favorites.

Coffee Cake – For a sweet breakfast/dinner, we love coffee cake. A simple variety will include cinnamon and brown sugar. If you really want to make the kids squeal, though, try throwing a few chocolate chips into the mix. You won’t have to ask them twice to come to the dinner table.

When I was growing up, I used to love it when my Mom made pancakes or French toast for dinner. I still love breakfast foods more than any other…
