Below are some dinner ideas that are easy to fix and are easy on your wallet too. During the summer, I just hate heating up the house in the afternoon, so I tend to cook in the morning and reheat in the microwave for dinner. I like to use my crockpot more often too. Here are some dinner ideas to get you started:
Grilled Chicken Breast – Chicken breasts can be bought for relatively little money in the freezer case. I love to grill these for a light and simple dinner. We add a dash of our favorite spices to give dinner a little extra flavor. Don’t forget to change the spice from time to time to keep this from becoming too monotonous.
Veggie Kabobs – Onions and peppers from our own garden can be turned into a fun dinner when they’re strung on skewers and grilled outside. For an extra kick of protein, you could always a few chunks of beef to the mix.
BBQ Chicken Sandwiches – These filling sandwiches are easy to make using your handy Crockpot. Simply drop some boneless, skinless chicken breasts into the slow cooker with 1 ½ cups of your favorite barbecue sauce. Allow the chicken to cook for three or four hours or until the chicken is almost falling apart. Then, pull the chicken apart and place on buns or bread.
Chicken Waldorf Salad – A cool salad is a wonderful break from the heat of summer. This tasty treat is made by adding cubed, cooked chicken to a mixture of diced apples, walnuts, dried cranberries, diced celery, and mayonnaise. I like to serve a scoop of the salad on top of a romaine lettuce leaf for a pretty setting.
Chicken and Dumplings – Comfort food (or food like my Grandma made it) may seem a little scarce during the summer, but I’ve found a slow cooker version of chicken and dumplings that tastes great and doesn’t heat up my kitchen. Start with two cups of cooked, cubed chicken. Add a can of cream of mushroom soup and cream of chicken soup. Now mix in two soup cans of water, a little flour, 2 chicken bouillon cubes, and a dash of black pepper. Mix all of this into your slow cooker. Then, cut a can of refrigerator biscuit into pieces (each biscuit makes four pieces) and stir into your mixture. Allow to cook for four to six hours.
