		<description>We often have pancakes for dinner, and for the person above, I use whole wheat flour (or at least part ww flour) for my pancakes. Potato&#039;s are actually good and healthy. I wouldn&#039;t suggest eating them at every meal but having a potato bar twice a month is a great way to save money! You can also do healthy pasta&#039;s as well. One thing we do is make a layered Mexican pizza out of whole wheat tortillas (10 in works best). Your base is salsa, next layer corn and black beans then cheese. Repeat and top with another tortilla. Cook at 450 for 12-15 minutes. Let cool about 15 minutes before cutting into 4 triangles. Serve with light sour cream and a salad or (heaven forbid) a side of Mexican rice! ;)</description>

I intern with Meatless Monday, a non-profit that works with the Johns Hopkins Bloomberg School of Public Health, which also encourages  going meatless more often to reduce the risk of preventable diseases like diabetes, hypertension, and cancer, while lowering environmental impact. And while the focus is around cutting meat, it is also around adding the protein, fibre, and vitamins that we are missing without meat. Thus, I think you’d like to visit the Meatless Monday website which has a vast array of recipes that can be both nutritious and cost-effective (get some extra protein in your pancakes with these delicious Buckwheat Apple Flapjacks http://www.meatlessmonday.com/buckwheat-apple-flapjacks/, or give your salad a make-over with this Asparagus Salad: http://www.meatlessmonday.com/asparagus-salad/).
