
Pumpkin Muffins
Ingredients:
2 cups flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
3/4 cup sugar
1 can (15 ounces) pumpkin
1/3 cup canola oil
1/2 cup half-and-half
2 large eggs
Directions: Combine all dry ingredients in a large mixing bowl. Add the pumpkin, canola oil, half-and-half, and eggs. Mix thoroughly. Fill muffin cups 3/4 full and bake for approximately 20 minutes in 375 degree oven.

Man those do sound good. Now I have to keep my eye out for some pumpkin filling so I can make them too.
The other day my mother made some Honey Oatmeal Muffins that turned out great. On Sunday my dad made cheese biscuits and they were so good, my fiance ate 4 and took them home!
