
This is my own version of pasta fagioli. It is not a soup but more like a casserole. My kids love it and I like how easy it is to make. The ditalini pasta makes the dish “different” and fun. If you use all fresh ingredients (i.e. not previously frozen meat) this would make a great dish to freeze for another time.

Ingredients:
1 pound ground beef or ground turkey
1/2 cup diced onion
2 stalks celery chopped
1 can Great Northern Beans (15 ounce)
2 cans kidney beans (15 ounce size) include the liquid
2 cans of diced tomatoes (15 ounce size)
1 tsp salt
1 tsp oregano
1 tsp basil
1/2 pound ditalini pasta
Directions:
In a large skillet brown the ground beef (or ground turkey) and onion until thoroghly cooked. Add the kidney beans and diced tomatoes. Stir to combine thoroughly. Add all the seasonings. Simmer for 30 minutes.
Separately cook the ditalini according to the package directions. Drain well and add to the beef/tomato mixture. Stir to combine thoroughly. Enjoy!
I like to serve this with homemade white bread and a side salad. This usually makes enough for leftovers the second day.

I made this over the weekend! Absolutely delicious. And it made a ton of food. My hubby will be happy eating this for a while!
