I always love doing chicken fried rice. Rice is cheap on its own and easy to cook (and left over rice works even better too!).

I always use my leftover chicken in 2 ways. Either use it in pasta or use it in a salad. It's the easiest and tastiest way for me to utilize leftover chicken and form a good full meal.

Once a week I buy one of those rotisserie chickens from the market. Usually when I need a quick dinner. I can make soup, tacos, chicken salad. That one chicken will usually last us 3 meals. One day I'll attempt to make stock from the bones!
