Five Ways to Use Leftover Chicken

Baked chicken is one of my favorite meals to prepare for my kids, but the leftovers used to cause me real problems. After all, my family will only let me reheat the same meal so many times before they start threatening to stage a mutiny. The frugal side of me hated to waste anything, though.

Before long, though, I found my groove when it comes to leftover chicken. Now I can work wonders with a little leftover chicken. I discovered wonders of using a recipe finder from the internet. My favorite one is MyRecipe.com, but a quick Google search will turn up other ones for you to try. In no time I was flooded with ideas to use my leftovers. Below are a few of my favorite ideas:

Chicken Tacos – Leftover chicken meat is easily converted into a tasty taco filling. All you have to do is cube and heat the meat. Add any toppings you like and place it all into taco shells. I like to think of it as my own version of Chipotle’s tacos.

Chicken Salad – Using leftover chicken to create a bowl of chicken salad will add a little zest to your family’s lunches. Combine cubed pieces of chicken with mayonnaise, celery, and any peppers you like. You can also use chicken salad as an appetizer for a party by providing crackers to dip into it.

Chicken Casserole – Nothing is as comforting as a warm casserole on a chilly evening. Leftover chicken can have a second life as a component in this yummy dish. Creamy soup, chunks of chicken, plenty of vegetables, and your favorite dressing mix are all baked together to create this household staple.

Chicken Alfredo – If you can boil water, chicken alfredo is easy to make. Simply boil noodles (choose whatever shape you’d like) until they’re soft. Top with alfredo sauce and heated chunks of chicken.

Salad Topping – If you’re looking to add a little substance to your healthy salad, you can dress it up with slices of chicken breast. Cut the chicken into bite-sized pieces and then toss into your salad. Now you can enjoy vegetables and get a little protein.

    Once a week I buy one of those rotisserie chickens from the market. Usually when I need a quick dinner. I can make soup, tacos, chicken salad. That one chicken will usually last us 3 meals. One day I’ll attempt to make stock from the bones!

    I always use my leftover chicken in 2 ways. Either use it in pasta or use it in a salad. It’s the easiest and tastiest way for me to utilize leftover chicken and form a good full meal.

    I always love doing chicken fried rice. Rice is cheap on its own and easy to cook (and left over rice works even better too!).

    I always reuse my leftover’s for chicken and dumplings. However, my family gets tired of it LOL
