Chicken With Stir Fried Peppers – Cook At Home Day

I wanted something quick and easy this past week. I decided on chicken with stir fried peppers. It was a very easy dish to make and was something different from the regular “chicken and rice”.

Ingredients:
4 boneless, skinless chicken breasts cut into bite sized pieces
2 tsp Olive oil
1 large green bell pepper cut into strips
1 large red bell pepper cut into strips
Uncle Ben’s long grain rice – cooked according to the package directions.

Directions:
In a large skillet over medium heat, cook the chicken pieces in the olive oil until done. Remove from pan and set aside. Then, saute both pepper strips in some additional olive oil until they are soft. Add the cooked chicken back to the pan and stir until thoroughly mixed. Serve over white long grain rice.

    If you want to spice up the peppers a little bit add lime juice and capers to the peppers. It gives it a great taste and a little something more than just olive oil. My wife and I add these peppers to chicken and cous-cous and love it!
