Florida Homeowner Insurance - January Special Session

I have been writing about the current situation in Florida with rising homeowner insurance costs.  Governor elect Charlie Crist and the legislature will be having a special session in January to address some of the issues with the insurance rates and come up with some solutions to help with the problem.  One of the problems is that insurance companies are leaving the state.  We’ve found that some of the insurance companies we have contacted for rate quotes are not doing business in Florida, and this has affected our ability to shop around for the best rate.  We will watch and see what solutions are proposed from this special session.  The bottom line is that all Floridians are going to pay in some form.

I was reviewing some posts we made 6 months ago and we were writing about a couple of ways that we save money.  Since we are frugal minded, we are always trying to find ways to cut expenses.  Here are some of the articles on saving money we’ve written:

Griddle Recipes

I did purchase the Black and Decker family size griddle that Target had for $19 on Black Friday.  We tried it out yesterday and made pancakes.  It works wonderfully and is a nice size too.  Now the kids want me to make more things on the griddle so I have been hunting for more recipes.  Here are some that I found from around the internet:

Bear Griddle Cakes:  Anything that is served with syrup is a big hit in our house.

Whole Wheat Blueberry Griddle Cakes:  It uses whole wheat so it must be healthy!

Cinnamon Griddle Cakes:  Yummy cinnamon with an icing too. 

Wild Rice Griddle Cakes:  From FoodNetwork, this recipe features cooked wild rice.

Griddle Flat Bread:  Looks like a very easy recipe that we are going to try out.

Potato Griddle Scones:  Cold mashed potatoes are used in this dish.  A great way to use up some leftovers. 

Oat And Apple Griddle Cakes Recipes:  From a Bed and Breakfast in Maine. 

Apple Spice Dried Plum Griddle Cakes:  This looked so unusual but very tasty.  I met it would taste like a muffin!

Chocolate Griddle Cakes:  What is there not to like about a griddle cake that has chocolate in it? 

Fruit Pancakes:  An illustrated guide to making a variety of fruit pancakes.  The kids will love this one.

Cornmeal Griddle Cakes:  Features cornmeal as the main ingredient.
